If you love to cook this is the cookbook for you. I have had this cookbook for a few years and have tried many of the recipes and they have all been fantastic! If you don't live in the city you will probably need find some of the spices online. I do not live in the city any longer so I don't have the option to buy fresh green or red chilis so I just substitute it with a jalapeno, it's not perfect but her recipes are solid with spices it still turns out great. This is one of my favorite cookbooks! The only negative I can say is that a few recipes I have tried called for too much water. I now always add the water gradually to get it to desired thickness or just omit the water.

I honestly believe the recipes I make from this book taste better than most of the Indian food (of which there is a lot here in NJ) we get out. You need lots of different spices and the recipes can be involved but the results are so worth it. I can't think of anything I've tried in this book that we didn't love.

The best Indian cookbook I've found, vegan or not. It has all the classic restaurant favorites as well as unusual and interesting geographic specialties. One of my favorite things about the book is how versatile many of the recipes can be. For example the roti recipe also makes perfect tortillas and the chickpea tofu works great in breakfast scrambles. It's definitely one of my most used cookbooks.
