The Path to Creole and French Cuisine

Most South Louisiananians have French ancestry and enjoy many traditional French recipes in addition to their own unique variations. I've included many of my French favorites, modified over the years to include a few shortcuts and reduce fat and salt. The majority of recipes are Creole/Cajun. Having known many locals whose families had lived in New Orleans for generations, I benefitted from their invaluable input. In South Louisiana, life largely revolves around eating, drinking and partying. Laissez les bons temps rouler!
