I really enjoy when I'm able to turn to this book. It gives me great ideas for unique meals, sometimes with international appeal. The pictures of each dish are gorgeous and the recipes really are a great starting point for each dish. However, I feel in some cases there are steps that are left out, or just not considered and the instructions are sometimes not as detailed as they could be. For example, there's a recipe for a cauliflower soup which according to the picture looks like it is supposed to be creamy. No where in the instructions does it say to puree the soup, but that would be the only way to get that consistency. Also, it does not say to temper the yogurt when you add it to the boiling soup and not doing this would certainly cause the yogurt to curdle (and it did the first time I made it), which would not make for a very creamy soup. Another minor annoyance is that some recipes only call for their titled herb as a garnish, so not all of them are herb inspired recipes. But, they do all seem to have a wealth of spices and herbs, at least the ones I've been able to make so far. My favorite pilaf recipe is contained in these pages and smells so fragrant and exotic when it's simmering on the stove. In general, if you know how to cook well and can spot omissions of steps and insert them where needed and if you're looking for a slightly exotic source of new recipe ideas using easily found ingredients, this is a great book to start with. And again, it's just beautifully photographed.
