Lots of great dishes, a lot of hard work

It shouldn't be surprising that a Charlie Palmer cookbook is going to involve a lot of work. But once you get past that and have a kitchen with plenty of room and someone to clean up after you; prepare to wow your guests. In the words of a friend of mine, I haven't seen anything with that kind of movature in a long time. That's a good thing.
