Easy to read and easy to understand. It's gives you simple examples and some simple recipes. It basically educates you away from "bad" carbs and towards "complex" carbs: "The value of grading carbohydrates in terms of simple versus complex lies in the ability to assess their overall nutrient value." I, too, want to read more books by this author!
