The fifth title in the Culinary Journeys series, this work combines recipes with descriptions of the cultures connected with the cuisines, and explains preparations and eating conventions. Unlike others in the series, which concentrate on one country or region, this book dwells on the variety of ethnic cuisines to be experienced in North American cities. The book includes 200 recipes from ethnic restaurants along with interviews with chefs and restaurant owners about their food.
I think Francine Halvorsen did an excellent job of "showing" and discussing foods from different cultures in interesting and creatice ways. The recipies are great!
