So far, we have made about six or seven of these soups. All have been quite good and fairly simple to make, (although a blender or food processor is often required for pureeing). Many are low-fat and offer refreshing ways to eat more vegetables. Ziedrich offers soups from a variety of ethnic cuisines, including Indian, Thai, Georgian, and Greek. I purchased this book because of the title alone, and was very impressed. I made a soup from it once a week all last summer and only disliked one. Some of the seasoning and ingredient changes are subtle from recipe to recipe, but they do make a difference in the taste. My DH works late one night a week and I served him cold soup that night. I would definitely buy this book again.
