I have used this book for about 10 years. The recipes taste good and it is one of my favorite cook books. All of the recipes are vegetarian and most of are vegan( or easily adapted to being vegan ). I liked that the recipes had serving suggestions for making complete meals. The book has an interesting history of legumes in addition to helpful information on identifying, preparing, storing, and cooking beans. I would buy this book again if a revised edition came out with only vegan recipes. The only other thing I would like to see is nutrition information with the recipies
